You don’t need to feel deprived this pancake day. Try our delicious easy to create Banana and Raspberry Pancakes.

You only need a few simple ingredients, two bowls, and a whisk to create these yummy pancakes.

Compared to most shop bought pancakes these are low in calories and fat.  For extra fluffy pancakes, don’t pat them with a spoon or spatula after tossing them. You need to keep the air inside which makes them light and fluffy.

If you’re not keen on raspberries you could use strawberries or blackberries.


1 Large Very Ripe Banana

2 Medium Free Range Eggs

1 tsp of sunflower oil/rapeseed oil

5 raspberries/4 Strawberries

1 tbsp Greek Yoghurt

Pinch of baking powder


How To

In a bowl whisk the eggs together. In a separate bowl mash 1 large banana into a puree.

Mix the eggs into the banana puree and add a pinch of baking powder

Over medium heat add the oil to a large non-stick frying pan, you could gently brush the oil over the pan, heat gently.

Use half the batter and gently spoon two dollops of the pancake mixture into the pan. Cook for approximately 1-2 minutes on each side.

Tip the pancakes onto a plate and add a dollop of greek yogurt then top with raspberries/strawberries
