Fancy a freshly baked muffin that won’t break your healthy eating habits? Here is one of my favourite recipes. It’s a firm family favourite too.

Its a wonderful healthy alternative to shop-bought muffins which can be high in fat and sugars. This recipe is super easy to create, it should only take 5 minutes plus its a great recipe for the kids to get involved with too.



100g/Cup Fresh Blueberries

3/4 cup of rolled oats

1 and half cups of Wholemeal Self Raising Flour

1 tablespoon of extra virgin olive oil/rapeseed oil/coconut oil

1 Teaspoon Baking Powder

2 Large Eggs

1 Cup of Skimmed Milk

1 Generous Tablespoon Agave Nectar/Honey

Small Tub Of Greek Yoghurt (Optional)



Heat oven to 180 degrees. Line a 12 hole muffin tin with 12 large muffin cases. In a large mixing bowl add the flour, oats, baking powder and nectar. In a different bowl whisk the egg, milk and oil together.

Slowly fold the wet ingredients into the dry ingredients to combine, don’t over mix. Gently sprinkle the blueberries with flour (this will stop them sinking in the mixture) and fold them into the mixture.

Spoon the mixture into individual cases and to a pre-heated oven 190 degrees. Bake for about 20 minutes or until golden brown – check half-way through. Serve immediately with a dollop of Greek Yoghurt.

Place the remaining muffins in an air-tight container, they should last for 2/3 days.
