I am a breakfast person but I am also a busy working mum so I know how challenging the mornings can be. Most of the time we just reach for something quick to perk us up, normally a cup of coffee, a bite of toast.

The great thing about this recipe is how simple it is to prepare, just a few minutes, plus the kids will love it.

Morning Kebabs (HH, B)

Ingredients

1 medium-sized banana

1 red apple

2 skewers

Half a tin of mandarins (discard the juice)

1 Kiwifruit

Handful of pomegranates

2 tablespoons of greek yogurt

1/4 teaspoon of ground cinnamon (optional)

1 tablespoon of unsweetened orange juice

 

Method

Chop the banana, apple and kiwi fruit into slices. Thread each fruit individually on to the skewers, in any order you like. Drizzle the orange juice over the fruit, sprinkle the cinnamon on top.

Place the skewers on the grill and cook over a medium-high heat for approximately 1 and a half minutes or until the fruit browns.

Serve with a dollop (or two) of Greek yogurt and a scattering of pomegranates

Tips

The great thing about this recipe is you can use any combination of fruits to suit your taste. If you like a glaze on your fruits you could try adding a drizzle of honey before cooking.
